Ready in only a few minutes and mega filling for the day ahead.
You can even serve these Peanut Butter and Avocado Bagels with some pre-prepared Mushroom Egg Muffins for an extra special breakfast.

Variations
- If you don’t have any salted peanuts, you could substitute sunflower seeds, chia seeds or bagel seasoning. I do love that crunch and the saltiness of the peanuts on top of your toast though.
- Next time, try alternating the bread that you use – Bagels are also a great substitution or even a slice of toast (try granary loaf).
- Try adding chopped strawberries on top of the peanut butter too. An unusual combination but so right!
Ingredients needed for this breakfast recipe

- Brioche Buns – See below for alternative bread choices.
- Maple Syrup – Only a little is needed so use as good quality as your budget allows.
- Peanut Butter – I prefer crunchy.
- Avocado – Make sure it is nice and ripe.
- Peanuts – Cheap supermarkets peanuts that are smaller than branded nuts (and a LOT cheaper) are brilliant for this recipe.
Method for making this Peanut Butter and Avocado Toast Breakfast Recipe

1. Toast the Brioche Buns and Mash the Avocado
2. Spread the Avocado onto the Brioche Buns

3. Spread half the amount of peanut butter as avocado onto the top of the mashed avocado (You could actually mix the 2 together but this doesn’t look nearly as pretty).
4. Drizzle some maple syrup and sprinkle some peanuts on top and eat immediately.
Why is Avocado good for you?
Avocado is known to have many health benefits. Although fairly high in fats, these are mainly considered to be ‘good fats’. Some nutritionists actually advocate eating avocado every day, believing that they can aid weight loss. Avocado contain no cholesterol, with the heart-healthy fats lowering cardiovascular inflammation.
In addition to aiding heart health, avocado is also said to improve digestion, lower the risk of depression, prevent bone loss and protect against cancer.
The many nutrients that avocado contains to provide all these health benefits are:
- High Fibre – Healthy digestion
- Potassium – Healthy digestion also possibly good for your hair health
- Low fructose – Prevents wind!
- Vitamin E, C, K, and B6
Is eating avocado in the morning better for me?
Interestingly, the time you eat avocado will change the health benefits for you. Eating the Avocado Peanut Butter Toast recipe in the morning will keep you fuller throughout the day, keeping blood sugar down and preventing excess calorie intake. Eating avocado at night can keep you fuller and help better sleep though.

Is Peanut Butter good for you?
There’s no denying that creamy peanut butter is very tasty, but is it good for you? Well the good news is that although peanut butter is high in fats, the majority are considered ‘good fats’ so high in monounsaturated and polyunsaturated fats and anti-oxidants. These can help prevent some heart disease and type 2 diabetes. It is also important to note that there is also a fair amount of saturated fat in peanut butter., which can in turn cause heart problems. (Is anything ever simple?)
The rough rule of thumb is moderation is the key – no more than 2 tablespoons per day and perhaps not every day and you should be fine to consume peanut butter.
Peanut butter is also high in fibre and protein.
There is very little difference between crunchy or smooth peanut butter apart from a tiny bit more fibre in crunchy but this is marginal go for whichever peanut butter recipe you prefer.
Which bread is best to use for this toast?
I have used Brioche Buns here, toasted a very lightly golden brown but wholemeal or granary slices of bread, toasted also make a perfect combination with the avocado and peanut butter.
You can butter your toasted bagel with either cashew butter or almond butter but I really didn’t think this recipe needed it.
